History and
interesting facts

It is cooked ham par excellence, entirely processed by hand as in the old days. Large pork legs flavoured with delicate, exclusive salt and cooked slowly at low temperature to preserve the quality and flavours of meat. Available in whole version with bone or partially boned (with hock).

Organoleptic
properties

The pinkish slice distinctly reveals the muscle bundles, the covering and marbling fat is pearly white and guarantees sweetness and softness. The aroma of roast and fine herbs intoxicates and invites you to taste to discover a soft but present texture, balance between sweetness and saltiness. The natural flavourings appear, thus completing the aromas in perfect harmony.

Version with bone: put on the vice and cut by hand; excellent cold, exceptional warmed in a bain-marie or in the oven; always impressive for events and banquets. Version with hock: cut into thin slices using a slicer. Excellent cold, exceptional warmed in a bain-marie or in the oven.

Pairing and Wines

We propose a Castel del Monte Rosato CDO: delicate wine with a fragrant, constant freshness with hints of currant and strawberries. The glass has acidity and richness, powerful in its reminiscence of the Mediterranean scrub.

Exceptionally consumed hot. Perfect with a side of buttered spinach, baked potatoes, with a brandy sauce, or dry Marsala, obtained from its sauce. It can be used to prepare rolls, combined with peas, pasta-based first courses, delicious sandwiches.
