This salame from Calabria, Southern Italy, has a characteristic oval shape when sliced and a knife-cut specialty texture. The flavor is bold and very spicy, with pieces of diced Italian pancetta rounding out the strong taste of the fennel seeds, chili and paprika.
This salame is named for its unmistakable aroma of wild fennel due to the addition of seeds. The color of the meat is a nice deep red, coarsely minced to a medium grain. It is characterized by its round scent and fresh flavor with notes of fennel and seasoned meat.
Olives cultivated in Italy, specifically in Castelvetrano (Sicily). With a deep green hue, round shape, and crisp flesh, they are prepared using traditional Sicilian production methods and are picked and pitted by hand.
